The much admired and iconic Bistecca alla Fiorentina (translated to "beef-steak") consists of the tenderloin and sirloin attached together on the 'T' bone, giving you a contrast in tenderness and flavour.

The perfect Bistecca alla Fiorentina, should be at least three fingers thick, served on the bone and adorned with no more than a healthy pinch of sea salt and a drop of olive oil.

You will not find a finer example than this – O’Connor Grass Fed Beef is sourced in the pristine Gippsland region of Southeast Victoria, from selected Angus cattle. This Bistecca has been wet aged for a minimum of 28 days and skillfully butchered. The sheer beauty alone of this thick cut T-bone will delight all your senses.

Traditionally served rare, but we won’t judge if you cook your steak to medium-rare!

From the pristine Gippsland region of South East Victoria, the O'Connor family has been supplying premium Beef for over three generations. Flourishing in abundant, nutrient rich pastures the free range cattle graze on natural clover and rye grass. 

Raised without artificial growth hormones, all O'Connor beef is sourced from selected British bred cattle (Black Angus & Hereford) and is certified "Natural" under the AQIS approved O'Connor Natural Beef Program.

Vacuum skin packaging (VSP) packs enclose product like a second skin. VSP extends the shelf life of product due to the absence of oxygen which causes food to deteriorate rapidly and constrains product purge eliminating yield loss in food.
