Fleckvieh 6 Year Old Retired Dairy Cow Cecina - 150g Sliced
In Spain, Cecina is beef, specifically the hind leg of a cow, that has been salted, smoked and air-dried. The oldest written reference to Cecina dates from the 4th century B.C. and the description of the process is the same as it is today.
This nicely marbled and flavoured beef from Txuleta 1882 Farm, has been lovingly cured by the artisans at De Palma Salumi.
Carefully selected Fleckvieh dairy cows are retired on pastures situated on the hills of the Gippsland region, Victoria. Lovingly managed with regenerative methods including rotational grazing to build soil and animal health.
The cut of meat, the topside, is chosen for its snowflake marbling and perfect formation. After salting, the beef is cold smoked over beechwood, which imparts a sweet aroma and nutty finish. The bresaola is then slow aged for 3 months without additives or hardeners. The result is a pure and authentic product with a smooth, clean palate, patiently nurtured and slow fermented.
This air dried Cecina is perfect for antipasto platters, or even consumed on its own with a cold beer or glass of sherry.
In order to maximise the flavour and aroma of any cured product, we suggest you serve the product at room temperature, or about 21ºC.
