Conservas Angelachu Anchovies are captured during the height of spring from the Cantabrian Sea, off the northern coast of Spain. The harvest and production take place in Cantabria meeting all standards and requirements necessary to bear CC Quality Controlled Seal for 'Cantabrian Anchovies'. Their artisans skilfully salt, eviscerate and pack the fish into barrels, to preserve the properties and characteristics of the fresh fish in their entirety. Once they have reached the optimum period of maturation, the skin of each fish is gently and carefully removed by hand, one by one. They are then masterfully filleted and packed in olive oil ready for eating.
Best served simply, either with fresh crunchy bread and Pepe Saya Cultured Butter; or take it to the next level with pickled Spanish onion and finely diced chives on the side, for a show-stopping starter.
