Our reinvented and refined Boudin Blanc or White Pudding is hand made in house. A mix of chicken, pork, milk, nutmeg and the finest French cognac have been carefully broken down and prepared into a beautiful savoury mousse and then steamed gently.
The texture of this sausage is extraordinary, silky smooth and juicy.
The Boudin Blanc can be grilled and served whole or sliced into small discs that you pan fry gently, serve alongside sticky caramelised onions. Boudin Blanc is also fabulous as a breakfast sausage for a creamy and lighter alternative to Black Pudding.
